Healthy Chocolate Slice

3x Crushed weetbix

1tsp Baking powder

1x cup Plain Flour

1x cup Coconut

1/2 cup Brown sugar

1/2 Cup choc chips

170g melted butter


Pre-heat oven 180c and line a rectangular tray.

Mix all ingredients together and flatten into the tray.

Bake for 10 -15 min

Cool before cutting

Ice with icing sugar 1 and 1/2cups icing sugar with 1T cocoa and 3tbs hot water.



Hina Matsuri Cheesecake

I found this cheesecake recipe from;


It is an amazing taste of green tea and strawberries!



80g biscuits
40g butter
200g cream cheese
200ml cream
200ml yogurt
4 tbsp sugar (I used sweetened condensed milk)
9g gelatine powder
4 tbsp water
1-2 tsp matcha
80g strawberries
1. Crumble the biscuits.  Melt the butter in a saucepan and add then to the biscuits. Mix well. Put into a tray and set in the fridge

3. In the meantime blend the cream cheese with sweet condensed milk until smooth. add the cream and gelatine and mix.
4. . Divide the cream cheese mixture into three equal portions.

5. Stir now in one part cream cheese the matcha powder and mix well. Then spread the green mass on the biscuit base and place in the fridge for 15 minutes.

6. Now spread the white cream cheese on the green layer and place for another 15 minutes in the fridge.

7. For the pink cream cheese puree the strawberries in a blender  and mix with the remaining cream cheese. Spread the mixture on the white layer and let rest for at least two hours in the fridge, until the cream is firm.

8. Lift the finished cheesecake carefully out of the mold and cut into desired pieces and serve.

Tofu Pudding Summer Bento

⅓ cup boiling water
1x Tbsp gelatin
175g firm silken tofu
5 x Tbsp. honey
1½ cup milk

1tsp Vanilla essence
Strawberry Sauce
1x sml punnet of strawberries
1 Tbsp. honey
Juice from 1/2 lemon


Combine boiling water and gelatin in a bowl and stir together until gelatin is completely dissolved.

Blend all ingredients in a blender for 5 min (tofu,honey,gelatin,vanilla essence and milk)

Pour into dishes and set in the fridge for 1 hour.

Strawberry Topping:

Mash strawberries with a potato masher and then mix in honey and 1/2 lemon juice.

When pudding is set add topping and serve.

Healthy Muesli Slice


½ cup (50g) quinoa flakes
2 cups (60g) puffed rice cereal
⅓ cup (50g) rice flour
½ cup (40g) desiccated coconut
½ cup (90g) sultanas
½ cup (80g) dried pear, chopped
1 cup (75g) dried apple, chopped
½ cup (125ml) coconut oil, melted
2 eggs
¾ cup (180ml) maple syrup
Preheat oven to 160ºC (325ºF). Line a 20cm x 30cm slice tin with non-stick baking paper. Place the quinoa flakes, puffed rice, rice flour, coconut, sultanas, pear and apple in a large bowl and mix to combine. Whisk together the coconut oil, eggs and maple syrup, add to the puffed rice mixture and stir until well combined. Spoon the mixture into the prepared tin and, using a large metal spoon, press to even the surface. Bake for 40 minutes or until golden and set. Cool in the tin for 15 minutes, transfer to the fridge and chill until firm. Slice into 5cm squares to serve. Makes 24.

Korokke (Potato & Meat Croquette)



Korokke (Potato & Meat Croquette)
4x  potatoes, peeled and halved
1 large onion, finely diced
½ carrots, finely diced
2 Tbsp. oil
350gm minced beef
1 egg
¼ tsp. pepper
3 eggs
2 cup Panko (bread crumbs)
½ cup flour
Oil for  frying
Tonkatsu Sauce
Boil potatoes until cooked.
Mash the potatoes.
Chop onion and carrot. Sauté onion until soft.
Add carrot until they are cooked.
Add the meat and fry. When the meat is cooked through, add black pepper.
Add the meat mixture into mashed potato in the large pot. Make sure you leave the liquid behind. Discard any liquid left in the pan.
Add an egg and mix all together until everything is well combined.
Cool down for about 15 minutes.
While the mixture is still warm, roll into patties shapes..
Put patties in flour, egg, and bread crumbs.
In a fry pan heat oil over medium high heat. Fry Korokke until they are golden brown .
Serve with Tonkatsu Sauce.
Enjoy this meal as a leftover the next day in your favourite bento box.

Easy Apple Pudding – Family Secret Recipe!

4x cooking apples
1 cup cold water
3/4 cup sugar

2tb SR Flour
1Tb butter.


Peel and core apples, slice and place in oven dish.
Rub butter into flour add sugar and water and  pour over apples, sprinkle cinnamon.
Bake in oven 180c until brown about 35 min

Japanese Gyoza (dumpling)



Bento Gyoza


Gyoza paper (can be purchased from asian food shop)

chicken/pork/beef mince (whichever you prefer) 350gm

Ginger 1tsp grated

Spring onion 3 x shallots

Soy sauce 1Tbsp


2x Garlic cloves


Chop spring onion ,cabbage,mushrooms and mix with mince. Add soy sauce, pepper and fish sauce. Pan fry until cooked.

Put teaspoons of mixture into the middle of gyoza paper. Then seal the edges with water. Fan fold the edges until sealed.

Pan fry until brown. Add ¼ cup water to fry pan and place lid on pan to steam for 2 minutes. Serve with rice vinegar and soy sauce.

A healthy bento lunch.

Super Easy Bento Pasta



1 cup pasta (any pasta ok,)
!/2 cup frozen peas and corn
1/2 grated cheese
2 bacon rashers
1 egg
Cook pasta till Al dente. Microwave peas and corn till soft 1min
Cut bacon into small pieces and fry until brown
Add all ingredients into a bowl and mix
Add grated cheese
Boil  Egg for 10 min and peel. Place inside egg mould and put in cold water for 5 min.
Take egg out of mould and put in bento box with pasta!

Matcha Vanilla Smoothie



1 banana

1 cup milk

matcha powder – 1 teaspoons to a few tablespoons depending on your taste

vanilla bliss so good ice-cream or you can use vanilla ice-cream
a few handfuls of ice

1 tablespoon honey

Blend everything together. Taste & adjust
A great additionto your bento lunch or bento breakfast.
